curries

Sindhi tomato curry

Sindhi curries are very famous and well known for their strong n spicy taste
However this curry is a little different then those normal ones
Cos this curry is made without dal and yet is yummy
Do try it as its very easy to make and not at all time consuming

You need

5 tomatoes
4-5 green chillies slit in half
A bunch of gawar(thin green beans)
10 lady finger(bhindi)
1 potato
8-10 florets of cauliflower(gobi)
Curry leaves
3-4 kukam dry
Tamrind
1 1/2 tbsp gram flour(besan)

Powder masalas

1 tspn turmeric powder
1 tsp red chilly powder
1 tsp coriander powder
1/4 tsp sugar
Salt to taste

Seasoning
Coriander seeds
Methi seeds

Method

Blanch all tomatoes,remove skin after blanching and make a puree of it
By grinding.keep aside
Heat oil in kadai,add coriander n methi seeds,add besan and stir till it
Changes color slightly be careful u don't burn it..immediately after besan
Changes color add tomato puree and green chillies stir well
Add 2 cup water..add all the vegetables
Once the water comes to boil add salt,turmeric powder,red chilly powder,
Coriander powder,curry patta,kukum and tamrind
Keep stiring till 5 mins,add sugar and cover with the lid
Simmer it for 15mins
Once the vegetables are cooked its done
Serve it with rice

Tip: can also add egg plant instead of cauliflower..
